TAIWAN

Dumplings are the most global food. There are Manti in Turkey and Uzbekistan, there are Ravioli in Italy, there are Maultaschen in my Swabian home region, there are Vareniki, Pirogi and Pelmeni in Europe’s East, there are Khinkali in Georgia and Empanadas in Latin America, and there are Momo in Tibet and in Bhutan I love all of them! When I went for the first time to Taiwan on 2001 I had my first and fateful encounter with Din Tai Fung. Its branches are now all over the world bit it was founded in Taiwan, in a building….I fully agree with Anthony Bourdain, that their signature dish, Xiao Long Bao, xxx, is the Rolls Royce of all dumplings. It’s the only food I could  eat again and again, every single day.
